제주지역 친환경급식에 대한 초등학생과 학부모의 인식도 및 만족도에 관한 연구

Abstract

본 연구는 친환경 식재료를 이용하여 학교 급식을 운영하고 있는 제주지역 초등학교의 학생과 학부모의 급식에 대한 인식도 및 친환경 급식에 대한 만족도를 파악하여 분석함으로써 친환경급식의 신뢰성 및 만족도를 높일 수 있는 방안을 모색하기 위한 기초자료를 제공하고자 하였다. 이를 위해 제주지역 초등학교 5～6학년 학생과 학부모 각각 530명을 대상으로 2010년 2월 1일부터 2월 12일까지 설문조사를 실시하였고, 회수된 설문지 중 최종적으로 학생 460부(87%), 학부모 344부(65%)를 본 연구의 분석 자료로 이용하였다. 본 연구 자료는 SPSS Win Program(Ver.12.0)을 이용하여 처리하였고, 조사항목에 대한 전체적인 현황 파악을 위해 기술통계량 분석을 실시하였고, 연구내용별 분석방법은 χ2-test, t-test, ANOVA 및 상관분석을 실시하였다.

본 연구의 결과를 요약하면 다음과 같다.

첫째, 조사대상 학생의 성별은 남자가 55.7%, 거주지역에 있어서는 동지역이 52.0%, 가족의 구성형태는 핵가족이 64.7%로 나타났고, 집에서 식사를 준비하는 사람은 어머니(77.8%)가 가장 높은 비율을 보였다. 조사대상 학부모의 성별은 여자가 77.6%, 거주지역에 있어서는 동지역이 60.5%, 연령은 40∼45세가 56.6%, 학력은 고졸이 52.5%, 월평균 소득은 100∼200만원 미만(31.2%)이 가장 높게 나타났다. 둘째, 학교급식에 대한 기대도는 5점 만점에 대해 학생 3.98점, 학부모 4.26점으로 학생과 학부모간에 유의한 차이를 보였다(p<.001). 학교급식에 대한 학생의 기대도는 안전성(4.49점), 우수한 원료의 식재료(4.33점), 알맞은 영양공급(4.26점), 친환경 농산물(4.24점), 음식의 맛(3.98점), 저렴한 값(3.70점), 급식에 대한 관심도(2.87점) 순으로, 학부모는 안전성(4.58점), 알맞은 영양공급(4.52점), 친환경 농산물(4.31점), 음식의 맛(4.16점), 저렴한 값(3.99점), 급식에 대한 관심도(3.88점)의 순으로 나타나 학생과 학부모 모두 식재료의 안전성, 우수한 원료의 식재료, 알맞은 영양공급, 친환경 농산물에 대한 기대도가 우선적으로 높아 친환경 급식과 관련된 항목에 대한 기대가 높음을 알 수 있었다. 셋째, 친환경 식재료에 대한 인식도는 학생의 경우 5점 만점에 평균 2.91점으로 나타나 인식도가 낮은 것으로 나타났고, 학부모의 경우는 평균 3.52점으로 학생들보다는 높았고, 학생과 학부모간에 유의한 차이가 있음을 알 수 있었다(p<.01). 넷째, 친환경 급식 실시에 대한 인지도에 있어서는 '알고 있다'의 비율이 학생 79.6%, 학부모 75.0%로 나타나 학생과 학부모 모두 대부분이 인지하고 있는 것으로 나타났다. 친환경 급식 실시에 대한 견해에 있어서는 '찬성한다'의 비율이 학생93.9%, 학부모 98.3%로 나타나 거의 모든 학생과 학부모가 친환경 급식을 찬성하고 있음을 알 수 있었다. 다섯째, 친환경 급식에 대한 만족도는 5점 만점에 대해 학생 3.62점, 학부모 3.88점으로 학부모의 만족도가 유의적으로 높게 나타났다(p<.001). 항목별로는 학생의 경우 안전성(3.75점), 알맞은 영양공급 (3.68점), 식재료의 우수성(3.64점), 음식의 품질(3.64점), 음식의 맛(3.38점) 순으로, 학부모는 안전성(3.98점), 알맞은 영양공급(3.94점), 식재료의 우수성(3.91점), 음식의 품질(3.89점), 음식은 맛(3.70점) 순으로 나타났다. 이는 학교급식에 대한 기대가 높았던 항목인 급식의 안전성, 식재료의 우수성에 대해 학생과 학부모 모두 만족도가 높게 나타났다. 여섯째, 학생과 학부모의 학교급식에 대한 기대도, 친환경급식에 대한 인식도 및 만족도간에 정(+)의 상관관계를 보였으며, 학교급식에 대한 기대도와 친환경급식에 대한 인식도는 친환경급식 만족도에 유의한 영향을 미치고 있음을 알 수 있었다.

이상의 연구결과를 종합해 볼 때, 정부와 지방자치단체는 학생과 학부모들에게 학교급식의 식재료인 친환경 식품에 대한 인식도를 높이기 위한 지속적인 교육을 실시하여야 하며 학교 급식의 질적 내실화를 위한 정부와 지방자치단체의 적극적 지원이 필요할 것으로 사료된다.

The purpose of this study were to (a) analyze the recognition and satisfaction of students and parents for environment-friendly foodservice and (b) to offer basic data to improve the their satisfaction of eco- foodservice at elementary school in Jeju. The subjects included 460(87%) students and 344(65%) parents. So this study performed a questionnaire survey from February 1 to February 12, 2010. The data were analyzed by descriptive analysis, χ2-test, t-test, ANOVA(duncan's multiple comparison), and Pearson's correlation coefficients, using the SPSS Win 12.0 programs. The result of this study can be summarized as follows. First, 55.7% of students were boys and 52.0% of them lived in city region and 55.9% of their mothers were 40 to 45 years old. Also, 77.8% of them answered that their mother served foods at home. Seventy seven points of parents were men and 60.5% of them lived in city region and 56.6% of them were 40 to 45 years old. Second, the expectation of subjects of school foodservice were 3.98 points in students and 4.26 points in parents. In terms of students' expectation scores on school foodservice, stability(4.40 points) scored highest whereas the interests in school foodservice(2.87 points) scored lowest. In terms of parents' expectation scores on school foodservice, stability(4.58 points) scored highest whereas the interests in school foodservice(3.88 points) scored lowest. Third, students' awareness of eco-foods was average 2.91 points and parents' awareness was average 3.52 points. Forth, in terms of the recognition of subjects on eco-foodservice implementation, 79.6% of students knew eco-foodservice implementation and 75.0% of parents were aware of it. Fifth, the satisfaction of subjects on eco-foodservice were 3.62 points in students and 3.88 points in parents. In terms of students' satisfaction scores on eco-foodservice, stability(3.75 points) scored highest whereas tasty food(3.38 points) scored lowest. In terms of parents' satisfaction scores on eco-foodservice, stability(3.98 points) scored highest whereas tasty food(3.70 points) scored lowest. Sixth, the expectation of subjects on school foodservice and the awareness on eco-foodservice were positively correlated the satisfaction of subjects on eco-foodservice.

Therefore, it is necessary for the government and the local government to provide continuing education for parents and students in order to enhance the their understanding of eco-foodservice food materials. Also, we need to ask for active government support to ensure internal stability of eco-foodservice.
