제주도 돈육 도매시장에서 모색과 도체 등급이 경락가격에 미치는 영향

Abstract

본 연구는 제주도 돈육 도매시장에서 모색과 도체 등급이 경락가격에 미치는 영향을 분석하기 위해 실시하였다. 이 연구에 이용된 자료는 2013년 7월부터 2015년 6월까지 제주도내 축산물공판장으로 경매를 위해 출하된 515,538두의 돼 지도체 자료를 이용하였다. 돼지도체 경락가격에 영향하는 요인으로 경매 연도, 성별, 경매 요일, 경매 월, 모색, 모색별 도체 등급, 출하농가, 경매 두수를 설정 하고 분석하였다. 분석 모형의 설명력(R2)은 0.71로, 이들 요인들은 모두 경락가 격에 유의적으로 영향하는 것으로 확인되었다. 경매 연도에 대한 효과는 2015년이 가장 높았고, 2014년, 2013년 순이었다. 성 별에서는 암퇘지>거세돼지>수퇘지 순으로 가격이 형성되었다. 또한 경매 요일에 따른 영향은 월요일과 목요일이 화요일과 수요일에 비해 경락가격이 높았고 금 요일이 가장 낮은 경락가격을 보였다. 경매 월에서는 9월이 가장 높았고, 1월이 가장 낮은 가격을 보였다. 경매 두수에 대한 효과는 평균 경매 두수를 (1106.7±226.9) 기준으로 경매 두수 100두 증가에 따라 돼지 도체 kg당 경락가격 은 43.44원(b=-0.43)이 하락하는 경향을 보이고 있었다(p<0.01). 등지방두께, 도체 중, 일 경매 두수, 경락가격 간의 상관계수를 추정한 결과 도체중은 등지방두께 와 0.45로 정(+)의 중등 상관관계를 나타냈고(p<0.01), 일 경매두수와 경락가격 간에는 -0.32로 부(-)의 상관관계를 보였다(p<0.01). 모색에 따른 경락가격은 kg 당 흑돼지 5,883.7원, 비흑돼지 4,885.8원으로 (p<0.01), 흑돼지가 비흑돼지에 비해 997.9원 더 높았다. 또한 등급별 경락가격은 흑돼지의 경우, 1+등급 6,472.6원/kg, 1등급 6,314.4원/kg, 2등급 6,054.4원/kg, 그 리고 등외 4,693.4원/kg이었고, 비흑돼지는 1+등급 5354.8원, 1등급 5,223.9원, 2등 급 5,049.9원, 등외 3,914.9원으로 모색에 따른 등급별 경락가격은 흑돼지와 비흑 돼지 모두 등급에 따라 차이를 보였다. 등급 간 경락가격은 비흑돼지보다 흑돼지 에서 더 심한 차이를 보이고 있었다. 흑돼지의 경우, 1+와 1등급은 158.2원/kg, 1 과 2등급 260.0원/kg, 그리고 2와 등외등급에서 1,361.0원/kg의 차이를 보였고, 비흑돼지의 경우, 1+와 1등급 130.9원/kg, 1과 2등급 174.0원/kg, 그리고 2와 등외등 급에서 1,135.6원/kg의 차이를 보였다. 또한 모색에 따른 도체 등급별 경락가격 차이는 1+등급 1,117.8원/kg, 1등급 1,090.5원/kg, 2등급 1,004.5원/kg, 등외등급 779.1원/kg의 차이를 보였다. 도체 등급이 높을수록 모색에 따른 경락가격의 차 이가 더 큰 것을 알 수 있었다.

This study was carried out to investigate the effect of coat color and the meat grades on the carcass price of pig. Data from a total of 515,538 heads of pork carcass for auction in Jeju from July 1, 2013 to June 30, 2015 were collected and used. The influential factors on the carcass price were gender, coat color, meat grade within coat color, and the year, month, and the day of the week at auction. R2 of the statistical analysis model was 0.71 and all the factors were significantly found in carcass price of auction(p<0.01). Among gender(female, male, barrow), the carcass price of female was the highest and male was the lowest. Also, for the effect of the day of the week, the carcass prices of Monday and Thursday were higher than the carcass price of Tuesday, Wednesday, Friday. Friday showed the lowest carcass price among the days of the week. In the effect of the month, the carcass price of September was the highest, and January showed the lowest price. For the effect of the number of carcasses a day at auction, based on the Mean heads, 1106.7, as 100 heads increase, the carcass price of pig(won/kg) decreases by 43.44won/kg(b=-0.43)(p<0.01). As the result of correlation analysis, among backfat thickness, carcass weight, heads per day, and carcass price of auction, the correlation coefficient between carcass weight and backfat thickness was significantly postive as 0.45(p<0.01). The number of heads a day at auction was negatively correlated with carcass price as -0.32(p<0.01). By coat color, the carcass prices of the black and the white and not black color were 5,883.7 and 4885.8 won/kg, respectively(p<0.01). The price of the black was 997.9 won/kg higher than that of the other. The auction prices by meat grade within coat color were as follows. For the black colors the carcass prices of the meat grade, 1+, 1, 2, and offgrade were 6,472.6, 6,314.4, 6,054.4, and 4,693.4 won/kg and for the white and not black color were 5,354.8, 5,223.9, 5,049.9, and 3,914.9 won/kg, respectively. Price variation with meat grade in the black was greater than that of the other coat color. For the black coat color, the differences between 1+and 1 grade, 1 and 2 grade, and 2 and offgrade were 158.2, 260.0, and 1,361.0 won/kg and for the white and not black, those were 130.9, 174.0, and 1,135.6won/kg, respectively. The price differences between coat colors were 1,117.8(1+ grade), 1,090.5(1), 1,004.5(2), and 779.1won/kg(offgrade). The price differences between coat colors were higher in high grade than in low grade.
